One sip of a mango smoothie and I’m instantly reminded of lounging around in Florida on the beach with friends, not a care in the world! Naturally this is one of my favorite tropical smoothie recipes to make when I wake up in the morning, or anytime I’m feeling kinda groggy and need some extra energy. Who wouldn’t want to be transported to lazy days on South Beach?!
There’s something about mango and coconut milk that instantly energizes me!
I think it just reminds me of Miami – the endless sunshine, tropical smoothies, beach cocktails, invigorating cuban music and all that fresh air! Reminiscing about Miami gives me just the mental energy I need to wake up and press “blend”. The tropical aroma’s and exotic taste invigorates my brain so much sometimes I almost forget I need coffee too! 😉 I like to add coconut extract to this smoothie for added amazing-ness! It’s totally optional, but if you do want to add it, this is my favorite coconut extract.

Coconut Mango Smoothie
- 1 cup (refridgerated) coconut milk
- 1 banana, sliced and frozen
- 1 teaspoon coconut oil
- 1 tsp coconut extract (optional)
- 1 cup mango chunks, frozen
- 2 tbsp coconut flakes, toasted
- 3 mint leaves
Add the coconut milk, banana slices and coconut oil to your blender. Blend on medium until smooth.
Add the mango chunks , coconut extract and blend on low for 30 seconds and then on high until smooth and creamy.
Pour into a glass, top with a few mint leaves and the toasted coconut. Enjoy!
I like to think of this as vacation in a mason jar.
