I love me some vegan parmesan cheese. Sprinkled over fresh pasta or on my Caesar salad, I can’t live without it. I don’t normally like to “veganize” recipes but this is a pretty darn good alternative to the real deal. Let me know if you try it and how you like it in the comments!
Vegan Parmesan Cheese
Total Time: 5 minutes
- 3/4 cup raw cashews
- 1/2 cup hemp seeds
- 1/2 cup nutritional yeast
- 1/2 tsp sea salt
- 1/4 tsp garlic powder
Combine all ingredients in a food processor and blend until it resembles parmesan cheese, approximately 1 minute.
Serve immediately over fresh pasta or Caesar salad!
May be refrigerated in an airtight container for up to 3 weeks.
