Overnight Pumpkin Oatmeal
This creamy, spicy Overnight Pumpkin Oatmeal is one worth savoring this fall. It's bursting with autumn flavors, incredibly healthy and tastes more like dessert than breakfast!
Ingredients
- 2 1/2 c cold water
- 1 1/2 c unsweetened organic plant-based milk of your choice (we used Califia Farms Almond Milk Barista Blend, Unsweetened )
- 8 oz pumpkin (fresh is best but organic canned pumpkin is an excellent alternative!)
- 8 oz organic steel cut oats
- 1/4 c organic pure maple syrup (we used Thrive Market Organic Maple Syrup, Grade A)
- 1 1/2 tsp pure Madagascar Bourbon vanilla extract
- 1 tsp ceylon cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp allspice
- 1/8 tsp sea salt
Optional Toppings
- 1/4 c toasted organic pecans, halved
- 1/4 c pure organic maple syrup (we used Thrive Market Organic Maple Syrup, Grade A)
- 1/4 c organic plant-based milk (we used Califia Farms Almond Milk Barista Blend, Unsweetened)
Instructions

Spray the inside of a slow cooker with cooking spray to coat.

Add all the ingredients and stir with a slotted spoon to combine.

Set the slow cooker to low heat and allow to cook for no more than 8 hours.

Remove the lid to the slow cooker after approximately 8 hours, being careful of the steam.

Using a solid spoon, stir gently.

Using a ladle, scoop into medium-sized bowls.

Top with your favorite toppings or the ones suggested above and enjoy for a quick, but seriously delicious breakfast!
