Pumpkin Hummus

Ingredients
- 15 oz chickpeas, drained (save 1/4 c of liquid)
- 2/3 c pumpkin puree
- 1/4 c tahini
- 2 cloves garlic, roasted
- 2 tbsp extra virgin olive oil
- 1/2 tsp sea salt
- 1/2 tsp fresh rosemary, finely chopped
Instructions

Coat a small saucepan with olive oil and roast the garlic over low heat for 15 minutes.

Meanwhile, add the drained chickpeas, aquafaba (liquid in the chickpea can), pumpkin puree, tahini, olive oil and sea salt to a food processor.

Blend on low until creamy and smooth.

Once fully roasted, add the roasted garlic and blend for an additional 10 seconds.

Using a spatula, scoop the hummus onto a serving plate or into a bowl and drizzle with additional olive oil. Sprinkle the fresh rosemary on top.

Serve immediately with pita chips, Naan or your favorite veggies and enjoy!
