It’s summertime here in New England, which means hot, humid days that are not going anywhere anytime soon! While I personally LOVE this weather, I have to admit, a cool refreshing smoothie really is necessary. Who wants to eat hot oatmeal for breakfast, or steamy soup for lunch when it’s 90 degrees outside? Not this girl!

You really can’t go wrong with this challenge! If you’re new to eating vegan it’s a smart way to replace one meal a day! That’s how I started when I went vegan. I just replaced my eggs and toast with a delicious, fruity (and sometimes nutty) vegan smoothie! To be honest, they all tasted much better than the boring yogurt and fruit smoothies I drank in the past, so making the switch was a no-brainer!
If you’ve been vegan for a long time, you can join the challenge too! Why not mix things up? You can incorporate new and different nutrients into the mix and boost your nutrition and quite possibly your immune system too!

Pina Colada Vegan Breakfast Smoothie
This vegan breakfast smoothie tastes like a creamy, cool cocktail - minus the alcohol but full of delicious, fruity flavor!
- 2 c pineapple, frozen
- 1 c coconut milk, canned or carton version
- 1 banana, sliced and frozen
- 5oz coconut milk "yogurt" optional
- 2 scoops vanilla protein powder we used Vega
- 1 slice fresh pineapple optional
- 1/2 lime optional
Place the coconut milk and frozen bananas in a high-powered blender and blend on low.
Add the frozen pineapple and coconut milk yogurt and continue blending.
Add the protein powder and blend for 10 seconds longer.
Pour into a chilled glass or to-go cup and top with a slice of fresh pineapple (optional) and a squeeze of lime juice for extra amazing-ness and enjoy!
