One of my favorite things to do after a long day of programming is to bake chocolate chip cookies.
They’re my go-to sweet snack so I always have the ingredients on hand for a sudden craving.
Luckily I stumbled upon this recipe for the Perfect Chocolate Chip Cookies from the NY Times. My thoughts? Make it into a vegan chocolate chip cookies recipe!
Below is the vegan version and they are 100% oozing with chocolate chip gooeyness. These chocolate chip cookies are SO flavorful and SO chewy, words cannot begin to describe how insanely tasty they are. This is the only vegan chocolate chip cookies recipe you will ever need!
I promise, one bite and they will melt in your mouth. Just try not to eat half a batch of dough before you bake them like I do 😉 Or maybe that’s your thing too!

Vegan Chocolate Chip Cookies Recipe
Hands down the BEST vegan chocolate chip cookies we've ever devoured. Adapted from the NY Times most talked about perfect Chocolate Chip Cookie recipe.
Ingredients
- 3 2/3 c organic all-purpose flour
- 1 1/4 tsp baking soda
- 1 1/2 tsp sea salt
- 1 1/2 tsp baking powder
- 1 c vegan butter
- 1/4 c coconut oil
- 1 1/4 c light brown sugar
- 1 c organic sugar + 2 tbsp
- 1/2 c applesauce
- 2 tsp Madagascar Bourbon Pure Vanilla Extract
- 16 oz vegan chocolate chips
Instructions

In a medium bowl whisk the flour, baking soda, baking powder and salt together. Set aside.

In the large bowl combine the butter, coconut oil, brown sugar, and granulated sugar with a mixer until fluffy.

Slowly add in the applesauce and vanilla. Mix until well combined.

With your mixer on low, slowly add the dry ingredient mixture. Mix until just combined, being careful not to over-mix!

Gradually add the chocolate chips. Cover the bowl with an airtight lid and chill for 24 hours.

Remove the cookie dough from the refrigerator and allow to soften for 30 minutes.
Preheat

Line two baking sheets with parchment paper and preheat your oven to 350 degrees Fahrenheit.

Form cookie dough balls using ice cream size scoops of dough. Place them on the cookie sheets and gently flatten the top of each ball with the bottom of a measuring cup. Sprinkle with sea salt.

Bake cookies for 12-14 minutes.

Immediately transfer your perfect vegan chocolate chip cookies to a wire rack to cool.
