Vegan Cranberry Orange Bread
This vegan cranberry orange bread with glaze is bursting with fresh, juicy cranberries and sweet oranges! It's so moist and fluffy and will literally melt in your mouth. Save room for more than one helping, it's too delicious to eat just one slice!
Ingredients
Cranberry Orange Bread
- 2 tbsp freshly ground flaxseed
- 5 tbsp water
- 1 c canned coconut milk
- 1 tsp pure vanilla extract
- 3/4 c vegan sugar
- 1/4 c applesauce
- 1 tbsp apple cider vinegar
- zest one orange
- 3 c vegan pastry flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 1 1/2 c fresh cranberries
Glaze
- 2 c confectioners sugar, sifted
- 1/4 c orange juice
Instructions

Preheat the oven to 350 degrees F and line a load pan with parchment paper.

In a small bowl, combine the freshly ground flaxseed with the water and set aside to thicken, approximately 5 minutes.

In a mixing bowl combine the coconut milk, vanilla, sugar, applesauce, apple cider vinegar and orange zest. Mix well!

Once thickened, add the flaxseed "egg" and combine.

Toss the fresh cranberries with 1 tbsp of pasty flour and set aside.

Combine the pastry flour, baking powder, baking soda and salt in a separate bowl and whisk until thoroughly combined.

Form a well in the dry ingredients and carefully pour the wet ingredients in, folding until just combined. Don't over-mix! Once there are no remaining clumps, carefully fold the cranberries in.

Carefully pour the batter into the lined loaf pan and bake on the center rack of the oven for 45-50 minutes, or until the bread is golden brown and a toothpick inserted in the center comes out clean.

Remove from the oven to a wire rack to cool for ten minutes, and then carefully remove the bread from the pan to cool on the wire rack completely.

Serve with optional glaze and sprinkle with remaining orange zest. Enjoy!

Combine the confectioner's sugar and orange juice with a whisk and pipe over the bread as it cools to glaze.
