Coconut Whipped Cream, that is. 😉 In case you didn’t click to get the recipe above, here it is again. The trick to making the coconut whip perfectly each and every time is to place the can of coconut milk in the refrigerator overnight. This causes the solids to separate. Once you open it simply scoop out the solids, whip with the vanilla and sugar and you’re good to go! Bonus points for using chilled beaters and a chilled mixing bowl.

Creamy Pumpkin Pie with an Almond Cookie Crust
This easy vegan pumpkin pie recipe can be made two ways - as a pie or as bars! It's delicious either way. It's delicate, flaky almond cookie crust pairs perfectly with the pumpkin pie filling. It's a recipe you'll want to make more than once! Save it now, you're gonna love it.
Ingredients
Almond Cookie Crust
- 1 1/2 c pastry flour
- 1/4 c pure, organic maple syrup
- 1/4 c organic, unrefined extra-virgin coconut oil, melted
- 1/2 tsp pure almond extract
- 1/4 tsp sea salt
Creamy Pumpkin Filling
- 20 oz pumpkin puree (fresh is best, but canned is an excellent alternative)
- 1/2 c coconut milk (canned)
- 1/4 c pure, organic maple syrup
- 1/4 c organic cane sugar
- 3 tbsp cornstarch
- 2 tsp pumpkin pie spice
- 1 tsp pure Madagascar Bourbon vanilla extract
- 1/4 tsp sea salt
Instructions

Preheat the oven to 350 degrees F and line a square (8x8) inch baking pan with parchment paper. Alternately, you can grease a a 9" pie dish.

Add the pastry flour, maple syrup, coconut oil, almond extract and sea salt to a food processor and blend until crumbly and sticky.

Transfer the dough to the baking dish and press so the bottom is evenly covered. Bake for 8-10 minutes.

Remove the almond cookie crust and set aside to cool.

Meanwhile, add the pumpkin puree, coconut milk, maple syrup, cornstarch, pumpkin pie spice, vanilla extract and sea salt to a stand mixer (or mixing bowl) and mix until creamy and smooth.

Carefully pour the pumpkin filling over the almond cookie crust and spread evenly with a spatula. Bake for 30-35 minutes.

Remove from the oven and allow to cool on a wire rack for 10-20 minutes.

Once cool, cover with plastic wrap and transfer to the refridgerator to set for approximately 2 hours.

Remove from the refrigerator, slice and top with coconut whip cream, a pinch of pumpkin pie spice and enjoy!
