So, here we are, with a vegan version of my favorite salad – Caesar!
Before going vegan caesar salad was my go-to everyday for lunch. After a long and thorough search for caesar-like vegan salad recipes I am now delighted to be posting this. It’s absolutely phenomenal.
Side note, I never loved Kale, but mix it with this dressing and I can eat a whole bag. Yep, you read that right! The salad addiction is real, friends. Anyways, I’ve tested it with the taste-testers and my folks and everyone agrees. Minus my very picky father, who “didn’t like the dijon taste” but still ate it for lunch (read, inhaled) with me 3 days in a row while we designed Vegan T Shirts. Go figure! Lol.
There is no doubt in my mind that you will LOVE this vegan salad!
Oh, and definitely pair it with Sweet Potato Fries!
They taste phenomenal dipped in this dressing. Seriously, it’ll blow your taste buds away.
Kale Salad with Creamy Caesar Dressing
Craving a Caesar salad? This vegan version is all that and more. It's so good I now make it for lunch everyday. Everyday, y'all. Be careful, it is absolutely addicting! 🙂
Ingredients
- 1 avocado, ripe
- 1/2 c water
- 1/4 c vegan mayonaise we used Just Mayo
- 2 cloves garlic, minced
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp sea salt
- 5 c kale, washed and chopped
- 1/4 c pepitas, toasted
Instructions

In a food processor, blend 1/2 of an avocado with the water, vegan mayonnaise, garlic, lemon juice, dijon mustard and sea salt until creamy.

Toss the kale into a lidded bowl and pour the dressing on top.

Cover with the lid and shake vigorously until coated.

Plate the salad and sprinkle toasted pepitas on top. Serve with Sweet Potato Fries for added amazing-ness!
