This recipe for overnight pumpkin oatmeal tastes just like pumpkin pie! It's our favorite overnight pumpkin oats recipe and only takes minutes to prepare. Just combine in your crockpot and it's ready in the morning!

Overnight Pumpkin Oatmeal

This creamy, spicy Overnight Pumpkin Oatmeal is one worth savoring this fall. It's bursting with autumn flavors, incredibly healthy and tastes more like dessert than breakfast!

Ingredients

  • 2 1/2 c cold water
  • 1 1/2 c unsweetened organic plant-based milk of your choice (we used Califia Farms Almond Milk Barista Blend, Unsweetened )
  • 8 oz pumpkin (fresh is best but organic canned pumpkin is an excellent alternative!)
  • 8 oz organic steel cut oats
  • 1/4 c organic pure maple syrup (we used Thrive Market Organic Maple Syrup, Grade A)
  • 1 1/2 tsp pure Madagascar Bourbon vanilla extract
  • 1 tsp ceylon cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp allspice
  • 1/8 tsp sea salt

Optional Toppings

  • 1/4 c toasted organic pecans, halved
  • 1/4 c pure organic maple syrup (we used Thrive Market Organic Maple Syrup, Grade A)
  • 1/4 c organic plant-based milk (we used Califia Farms Almond Milk Barista Blend, Unsweetened)

Instructions

  1. Spray the inside of a slow cooker with cooking spray to coat. 

  2. Add all the ingredients and stir with a slotted spoon to combine. 

  3. Set the slow cooker to low heat and allow to cook for no more than 8 hours.

  4. Remove the lid to the slow cooker after approximately 8 hours, being careful of the steam. 

  5. Using a solid spoon, stir gently. 

  6. Using a ladle, scoop into medium-sized bowls.

  7. Top with your favorite toppings or the ones suggested above and enjoy for a quick, but seriously delicious breakfast! 

  8. Short on time? Scoop into a reusable, air-tight container (see our favorite below) layer with your favorite toppings, cover and take it to go!
