Vegan Chocolate Chip Cookies Recipe

Hands down the BEST vegan chocolate chip cookies we've ever devoured. Adapted from the NY Times most talked about perfect Chocolate Chip Cookie recipe.

Ingredients

  • 3 2/3 c organic all-purpose flour
  • 1 1/4 tsp baking soda
  • 1 1/2 tsp sea salt
  • 1 1/2 tsp baking powder
  • 1 c vegan butter
  • 1/4 c coconut oil
  • 1 1/4 c light brown sugar
  • 1 c organic sugar + 2 tbsp
  • 1/2 c applesauce
  • 2 tsp Madagascar Bourbon Pure Vanilla Extract
  • 16 oz vegan chocolate chips

Instructions

  1. In a medium bowl whisk the flour, baking soda, baking powder and salt together. Set aside. 

  2. In the large bowl combine the butter, coconut oil, brown sugar, and granulated sugar with a mixer until fluffy.

  3. Slowly add in the applesauce and vanilla. Mix until well combined.

  4. With your mixer on low, slowly add the dry ingredient mixture. Mix until just combined, being careful not to over-mix!

  5. Gradually add the chocolate chips. Cover the bowl with an airtight lid and chill for 24 hours

  6. Remove the cookie dough from the refrigerator and allow to soften for 30 minutes.

Preheat

  1. Line two baking sheets with parchment paper and preheat your oven to 350 degrees Fahrenheit.

  2. Form cookie dough balls using ice cream size scoops of dough. Place them on the cookie sheets and gently flatten the top of each ball with the bottom of a measuring cup. Sprinkle with sea salt. 

  3. Bake cookies for 12-14 minutes. 

  4. Immediately transfer your perfect vegan chocolate chip cookies to a wire rack to cool.
