Vegan Strawberry Mojito Smoothie

This vegan strawberry smoothie is refreshing and delicious, perfectly reminiscent of your go-to summer Mojito - minus the alcohol of course

Ingredients

  • 1 c strawberries, frozen
  • 1 banana, sliced and frozen
  • 1/2 c plant-based milk we use coconut
  • 1 tbsp fresh mint leaves, or basil chopped
  • 1 tsp honey, or agave
  • 1/2 tsp lime zest
  • pinch freshly ground black pepper

Instructions

  1. Add the strawberries and plant-based milk to a blender. 

  2. Blend on low for 30 seconds

  3. Add the bananas, mint leaves, honey, lime zest and pinch of black pepper. 

  4. Blend on high until creamy and smooth. 

  5. Pour into a glass, top with a couple mint leaves and enjoy!
