Kale Salad with Creamy Caesar Dressing

Craving a Caesar salad? This vegan version is all that and more. It's so good I now make it for lunch everyday. Everyday, y'all. Be careful, it is absolutely addicting! :)

  • 1 avocado, ripe
  • 1/2 c water
  • 1/4 c vegan mayonaise we used Just Mayo
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp sea salt
  • 5 c kale, washed and chopped
  • 1/4 c pepitas, toasted


  1. In a food processor, blend  1/2 of an avocado with the water, vegan mayonnaise, garlic, lemon juice, dijon mustard and sea salt until creamy.

  2. Toss the kale into a lidded bowl and pour the dressing on top. 

  3. Cover with the lid and shake vigorously until coated.

  4. Plate the salad and sprinkle toasted pepitas on top. Serve with Sweet Potato Fries for added amazing-ness!
