Pina Colada Vegan Breakfast Smoothie

This vegan breakfast smoothie tastes like a creamy, cool cocktail - minus the alcohol but full of delicious, fruity flavor!

Ingredients

  • 2 c pineapple, frozen
  • 1 c coconut milk, canned or carton version
  • 1 banana, sliced and frozen
  • 5oz coconut milk "yogurt" optional
  • 2 scoops vanilla protein powder we used Vega
  • 1 slice fresh pineapple optional
  • 1/2 lime optional

Instructions

  1. Place the coconut milk and frozen bananas in a high-powered blender and blend on low.

  2. Add the frozen pineapple and coconut milk yogurt and continue blending.

  3. Add the protein powder and blend for 10 seconds longer.


  4. Pour into a chilled glass or to-go cup and top with a slice of fresh pineapple (optional) and a squeeze of lime juice for extra amazing-ness and enjoy!
