Creamy & Delicious Sweet Potato Smoothie

Ingredients

  • 1 c plant-based milk, we used barista blend almond milk (see below)
  • 1 c sweet potato, chopped and frozen
  • 1/2 c cauliflower, chopped and frozen
  • 1/4 c maple walnut granola
  • 1 tbsp pure organic maple syrup
  • 1 tbsp maple almond butter
  • pinch sea salt

Instructions

  1. Combine the plant based milk with the frozen sweet potatoes in a blender and blend on low for approximately 30 seconds or until creamy.

  2. Slowly add the frozen cauliflower, maple syrup, maple almond butter and sea salt and blend once again, on high until very creamy and no visible chunks remain.

  3. Pour into a tall, cold glass and enjoy with granola sprinkled on top!
